Saumur Blanc - Clos de L’ecotard
Wine Making: Michel Chevré worked with Thierry Germain of Roches Neuves, one of the best Loire producers before founding his own small domain. Yet, the wine is vinified by Thierry Germain in his own cellar.
The harvest is carried out manually. Upon reaching the winery, the whole bunches are pressed slowly and the must obtained is fermented and aged for 12 months with its lees in French oak barrels.
Appellation: The vineyards for Michel Chevré are located on a hill of clay-calcareous soils facing south, in the village of Courchamps, where the plots are worked with horse-drawn ploughs and under the parameters of organic farming.
Tasting: This is an extremely crisp, bone dry Chenin Blanc with lively acidity. The wine is complex with expressive aromas of citrus, apricot, green pear, melon, thyme, white flowers like honeysuckle are accompanied by flinty mineral and saltiness. But don't be fooled by all these, it is silky soft, a bit shy and delicate. Absolutely wonderful Chenin that will age a decade.
How to Drink & Serve: Serve between 6-8°C.
Pair with monkfish and chorizo or kingfish.
