Les Terriens - Au Dela
Wine Making: The Vinification for "Au-Dela" is manual harvesting, sorting, de-stemming and sorting onto a vibrating table. Malolactic fermentation in barrels for 20 days and then aged for 8 - 12 months in demi-muids and barrels.
Terroir: The plots of Viognier vines for "Au Dela" are located in the heart of Ardeche, just south of Valance. The soils consist of Mica-Schist - a metamorphic rock.
Tasting: The appearance of the Au Dlea is light-bodied with a hint of lemon yellow. A vanilla aroma, developing into lemon and honey, The initial taste has balanced tannins, subtle hints of lemon and a long finish of honey.
How to Drink & Serve: To be served between 11 and 13°C.
Pairings: Pairs perfectly with, sea bass, hake or chicken. To be consumed within the next four years.
